cranberries & closing....

My favorite part of thanksgiving is cranberry sauce.... I always make extra so I can eat it by the bowl full before I ever think about roasting a turkey. I like to add fresh ginger, orange zest, & cinnamon sticks for some extra zip.

We decided to close down the trailer after the cold snap last week. Daisy (the little trailer we love) just gets to cold & needs to go into hibernation. So we will keep you all posted.....
It will be sad to see the lights dim...... she is so beautiful & full of love. Hope everyone had a peaceful holiday...

Winter Squash & Cookies


These are my new favorite. Little Dumpling Squash has been making it to are table almost every night of the week. They are tender, sweet & extra good with butter (of course). I think I will stuff some this week with sausage, bread & cheese. We will also have Black Bean Chili with Grilled Pork, Roast Chicken & Root Vegetable Soup, & Tuscan White Bean Soup. We will also have a Strata with Smoked Salmon & Thyme......and later in the week I want to make some Mac & Cheese with buttery bread crumbs. I have been going a little cookie crazy.... so we will have Molasses Ginger Cookies, Oatmeal with Fig & Walnut & Dark Chocolate Sable.

Thanks to everyone who stopped by last week! It was nice to see friendly faces. I got to work out the new menu & start to fine tune what everyone is craving for fall. Warm & Hearty seems to be the thing.











So this week I will concentrate on just that!
We will have the little bites like the bacon wrapped dates & deviled eggs.

We will also have a Braised Beef Short Ribs with grainy mustard & red wine, Creamy Polenta with Wild Mushroom Ragout, & a sloppy Roast Pork Sandwich with apple carrot slaw. Soups will be Chicken & Spaetzle, Cauliflower & Blue Cheese, Carrot Coconut, & Cranberry bean, Kale, & Sausage. Maybe even a Pumpkin Curry could be in the works. So just remember not everything will be available everyday but, you know you will find something tasty. We will also have for your sweet tooth Carrot Cake Cupcakes with Molasses Frosting, Coco Crisp Cookies & Ginger Lime Macaroons.

Tempest Fugit















My how time flies....... I can't believe how much time has passed since I checked in last. Thanks to all of you who keep coming back to find the same old post, you are real troopers. We had a wonderful time in Hawaii. So beautiful & relaxing. The landscape is so amazing. We visited a beach with green sand, saw a rainbow eucalyptus, & saw some of the most colorful flowers. We stayed in this great little motel right on the beach.We could see the little schools of yellow fish from our room & wake up to the sound of the ocean. It was so nice to decompress.

Then we hit the ground running upon our return just 2 day before the Mississippi Street Fair. Icy Cold Watermelon Limeade for everyone! Then it was summer in full swing. I have been having fun making Ice Cream Sandwiches. Last week we had Roasted Banana & my Mom brought us some fresh raspberries from Sauvie Island so I had to make Ice Cream with them. I have been making them with a coco cookie I have made for years. It's very crisp & holds up nicely to the ice cream. This cookie recipe I tweaked a bit & it is now Gluten Free. So come by & see what flavor we have this weekend.

Puppets, Puppets here come the Puppets

So we are starting the Puppet season off on Friday June 25th with or with out Summer! Mudeye Puppet Company will open the season with Deepsy Diver. Come explore the underwater world & learn to protect our watershed. Show starts at 10am. & is $5 a person. We will have Fresh Huckleberry Muffins, Apple Butter Scones & plenty of delicious juice. So come get summer started with us.

Open for Summer


We are really ready for summer. We extended our hours this pass weekend. We are now open Friday thru Monday 9-4. So if Summer would just hurry up & get here that would make us all happy. The Big juicer is back at work & we have been having a few more desserts on the menu. I have been inspired by custard, puddings & curds lately. It all started when I made Chocolate Pudding to take to Grandma's house. Who knows what this week will bring ...... Meyer Lemon Meringue Pie maybe

3rd Annual Eat Mobile Event

"It's homemade granola we make at the trailer with Greek yogurt & a raspberry rhubarb compote. The granola itself is gluten free & dairy free & there are no refined sugars in anything, we use agave, maple, & honey"
I think I said that a million times Saturday night at the 3rd Annual Eat Mobile Event. We had a great time & walked away with the Best Style Award. You know that made me feel proud & humbled. Everyone seemed to love the granola goodness we were sharing..... Who knew so many people would love rhubarb. Crazy for it they were.

I have to hand it to William , Lena, & my Mom for with out them I would never have been able to pull it off. They scooped & dolloped over 1300 samples......










Thanks to everyone who came out to support a great cause MercyCorps NW is awesome! They really do good work. A special thanks to all the people who gave us their peoples choice marble..... I think we received more this year than ever with so many kind words. Congrats to all the winners. Garden State as always tasty & innovating the street food scene. Whiffies Fried Pies.... I mean who doesn't love fried pie ! Way to go Whiffies ....

Eat Mobile ..... sold out!

It's that time of year..... Eat Mobile is this Saturday under the Morrison Bridge. We will be serving up our deliciously crunchy gluten free granola with Greek yogurt & raspberry rhubarb compote. It's always tricky to pick what to do for this event. Not just one thing represents all we do at Moxie Rx. So we will be closing early on Saturday (1pm) to get ready for the event. Hope you got tickets & can enjoy what Portland has to offer while supporting MercyCorps NW all at the same time.

Yes, we are Now Open!

We opened this past weekend & thanks to everyone who stopped by to say hello. I really do miss everyone when we close down.
All the kids grow so much & I have to catch up with everyone & their adventures....This will be our 5th year in the little trailer.
We have lots of plans in the works.... puppet shows, movie nights & a big party to celebrate Daisy's 5th birthday!

Bye to 2009 & looking toward the future

It is hard to believe that 2009 is over. It is like a wave washed over me & when I stood up another year had passed. I'm so ready for a new decade! I can't wait to see what we do with our lives & business. We had a great season last year. So much press... it made me start to believe I really had something going on. Not just solely satisfying my need to nurture & connect with people. I had so may great food adventures this past year & got such inspiration from so many people.

Over the Holidays we went on a road trip to the Bay Area. It was our old stomping ground before moving to Portland. So I tried to go to all the places I loved & have missed. First stop Cafe Fanny. Alice Water's little cafe nestled in between a wine shop & the Acme Bakery. Oh the smell of bread all day long. I love this cafe so much it really speaks to me. Everything is simple & good

I always enjoyed breakfast the most..... fresh beignets with homemade jam. Eggs cooked just right with prosciutto that melts like butter in your mouth. Then relax & enjoy your cafe au lait. Is there a better way to start the day?

Another one of my favorites in the East Bay is the Holy Land. It's a kosher Israeli cafe. It is one of those places were I always get the same thing. That is rare for me but, I could never pass up the sampler plate with a side of falafe.The pickled carrots & beets, the super smooth hummus & the smokey baba ganoush, tabouli & tomato relish. It's the kind of thing I really could eat everyday.
So after a bellyfull of HolyLand I realized that Ici the little ice cream shop I had read about was just up the street. We had to stop in and check it out. I had a scoop of Rosemary Pinenut Brittle & Meyer Lemon. Wow..... creamy & what a treat they had wheat free cones! I had made brittle for the holiday so I was inspired by the use of herbs in theirs.
Our friends from New Zealand were staying in the Presidio. So we picked them up & went out for a traditional dinner at Brandy Ho's. It is one thing I really miss about the Bay Area & the East Coast is the Chinese food. I grew up on chicken with almonds, egg drop soup, & little cups of tea with no handles. Some of my fondest childhood food memories are of eating chinese food with my Mom in a dark restaurant with deep red booths. Where the hostess had a jet black beehive & would always give me an extra almond cookie.
